A homemade granola with fruit or plain yogurt is a great way to start off a weekend brunch. My version is healthier than the store-bought versions. The trick is keeping the oil to a minimum and substituting orange juice for part of it. If you prefer dried fruit that is baked—it’s much chewier—add it to the granola mixture before baking. If you want the granola crisper, leave it in the oven with the heat off for another two hours.
- 2 cups rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 3 Tbsp vegetable oil
- 1/4 cup orange juice
- 3 Tbsp pure maple syrup
- 1/2 cup chopped nuts of your choice
- 1/4 cup diced dried apricots
- 1/4 cup diced dried cranberries
1. Preheat oven to 300°F. Line a baking sheet with aluminum foil and spray with vegetable oil. 2. Combine the oats, flour, sugar, cinnamon, ginger, oil, orange juice, maple syrup and nuts in a mixing bowl; mix thoroughly. Place on the prepared baking sheet and bake for 35 minutes, tossing once to prevent burning. 3. Add the dried fruit. Serve immediately or store in an airtight container.
